Honestly, she'll just keep going until there's a big enough hole for a person to climb through unless something prevents her from doing so. She really wants to get this over with so she can get back to the tavern and have some dinner...

Veronica begins to simply tear into the door, sending chips and chunks of woods flying. Some drop below into the boiling water of the tub. (Make another attack against the door).
Meanwhile, as Kai stands underneath, distracted by the dhampir's efforts to break through the trapdoor, is too preoccupied to notice the the trickles of water lapping over the side of the porcelain tub and gathering on the floor. Without warning, the water surges upward behind him, crashing down against and attempting to shove him into the tub.
"Wha-"The wind is nearly knocked out of Kai as the water slams into his back. He catches the side of the tub, bracing against it as he tries to overpower the elemental force trying to shove him into the boiling water.

Veronica slams her fist into the trapdoor once more, punching a decent sized chunk of it straight through. From here it's trivial to make the hole big enough for a Medium sized creature to crawl through now.
Consider us "In Initiative" now. Each character will have one turn, and an environmental effect will resolve, and we'll repeat.
Try as he might to overpower the surging water, his grip on the edge of the bathtub slips, and the aasimar is pulled underneath the water. The water burns his skin and stings his eyes, and seems to force him down further into the tub.
Kai: You are grappled, and you take 1 fire damage as the boiling water scalds you.
It can't be that easy, Lori had just been thinking when the water surges around them, pulling in and trying to drown Kai. "Oh, hells!" She yells in surprise. "I'm not built for this, someone help!" As the words leave her mouth, she hurries up to the tub and reaches in with both hands, trying to get ahold of him to pull him out.

There isn't a lot that she can do from where she is... except... she throws one end of the rope towards the warlock, then climbs into the hole to secure her end of the rope. She doesn't bother to yell down to him since he probably couldn't hear her anyway.

Veronica crawls through the hole in the trapdoor, dropping the rope down after her. A quick glance around she finds a cramped space with a sloped ceiling and a boarded-up skylight. There's thick wooden beams on either side of the trap door, and running along the length of the attic. The room is grimy and dirty. There's boxes covered in dirty drop cloths, barrels, trunks, and broken furniture all layered in a fine dust.
Lori tries to pry Kai from the water's constrictor-like hold, but it feels like trying to lift an anvil and isn't even able to budge him. His own hands find purchase on the sides of the tub and he tries to pull himself out. As he struggles against the force holding him it jerks him back, and his grip on the lip of the bathtub slips.
Veronica ties the rope off to the strongest-looking beam, then she decides that she'd better get down there to help the others out... unfortunately, she isn't a whole lot stronger than the other two. Using the safest option (since it really wouldn't be very helpful if she got herself dragged into the boiling pool as well), she dashes across the ceiling and down the wall to join Lori in trying to get Kai out.
"I anchored the rope to a beam in the attic... the two of us should be able to pull him out with minimal risk of being pulled in with him. Come on, grab hold! Though... if he's been dragged under, we might need to fasten some kind of weight to sink it down to him..."
"Right...The rope, need to weigh it down..." Lori says, trying to calm herself down to think through the problem. A quick mental rundown gives her nothing in her pack that she might be able to use, but...
She takes the dangling end of the rope, quickly tying a knot around the staff she uses as a spellcasting focus. When done she tosses it into the tub, yelling. "Grab the staff Kai!"
Next she grabs the rope, ready to help Veronica pull as hard as she can.
Even pulling with their combined might, the water simply will not yield. Still restricting his movement, the water tries to force its way into his lungs.
Kai, take whatever action you're going to try on your turn. And make a Constitution saving throw.
Kai holds onto the staff for dear life while the others try to pull him out. When it becomes clear that their efforts have failed he lets go of the staff, bracing his hands on the side of the tub again as he tries once more to pull himself out.
Kai's arms begin to feel tired, muscles straining as he tries again to pull himself out of the living water's grasp. Once again, his efforts are rebuffed as the water seems to constrict tighter. It forces its way into his lungs, expunging all of the air left in him.
Kai is now Suffocating. With a CON modifier of (2) he can survive for (2) rounds.
"I don't need to breathe... so I'll last down there a lot longer than he will," the vampire says. "But... the heat will still kill me eventually... but I think I have a good shot at wriggling free of that thing if I go down there to get him out..."
She swallows nervously... but she doesn't see any other option... With one last regretful look at the world on the surface, Veronica leaps into the water to try to pull Kai out.
(I guess this counts as taking the Help action to give him advantage on his next Athletics check to escape? Or should she roll an Acrobatics check to pull the two of them to the surface with Kai's help?)

The staff splashes as it impacts the water, sinking down across Kai's chest. Though muffled, he'd be able to hear Lori shouting at him to grab it.
Veronica or Lori can make another Athletics check, this time with advantage.
