I am DM for a party that includes a rogue. Now, he likes to steal not just from NPCs but also from PCs. I am cool with him stealing from the party and the players are too. Now here is the problem. I don’t want him to for example steal a whole purse, but rather just some coins or one item. Are there any roll table or advice on how much the rogue gets when he steals?
If he is stealing from NPCs, you as the DM can decide how much or how little the NPCs are carrying so there isn't much of a problem there. When he steals from other players though that could be problematic, perhaps give the player he is stealing from advantage to a perception check to catch the rogue in the act if the rogue is trying to go for too much. Maybe also impose a penalty/disadvantage to the rogue's sleight of hand check if needed. Or just outright say he fails if he tries to do something ridiculous (like trying to steal somebody's underwear while they are wearing it kind of ridiculous).
If he trying to pickpocket a pouch, they wouldn't be able to count how much he gets just for puting his hand on it. Whenever he makes it, roll (or make him to roll) a d6 or any other dice you thing its appropriate for amount of gold he gets.
If he goes not for gold, ask him to determine what he wants, and than evaluate difficulty for it based on common sense. I mean, if he wants to steal a iron ignot from inside a backpack it maybe more noticeble than drawing a single arrow from a quiver.
Also, make your players order its itens into containers on their inventary. So, if you he says "I want the first thing I grab inside that guy's backpack" you can roll a d20 (or any other) and pick count the itens listed in that character backpack on its inventory tab. If its a no-way-to-steal-unoticed item (as a tent) pick the next reasonable one.
