Going by the rules for making adamantine weapons in Xanathar's Guide to Everything, adamantine doesn't seem worth it. It costs 500 gp to make an adamantine weapon. By the time you can afford that, most adventuring parties should be able to afford a +1 magic weapon, which can bypass just about any damage resistance or immunity. After reading the stats for Loup Garou from Van Richten's and how silver weapons, not just magic, but silver weapons, are necessary to defeat it, I wondered if something similar could be done with adamantine weapons. Some ideas for minor changes to existing monsters:
Golems - golems remain immune to nonmagic weapons. Magic weapons turn that immunity into resistance, with adamantine weapons bypassing their damage immunity outright.
For creatures that are merely resistant to nonmagical weapons that can be overcome with adamantine (Animated Armor and various Earth Elementals), perhaps make it so adamantine weapons crit on an 18+?
In past editions, there used to be lots of things only effected by specific weapons, adamantine, blunt, magical, etc. It created what was called the golf bag situation, where martials had to carry around one of each kind. It was very annoying. Personally, I wouldn’t want to go down that road again.
That said, if it’s fun for you, of course you should go ahead.
Adamantine is designed to be used as armor, not weapon. Think of it as a strong metal that does not hold a good edge. Yes, it can break through other objects, but it is more defensive. As Xalthu stated, your concept was specifically considered and rejected because of how it affects the game. Unintended consequences
If you wanted to make Adamantine more useful as a weapon, I would think about some other effect, not having to do with Resistance/Immunity. You could for example have it do it -1 to hit, +1 damage, representing a duller edge but more impact due to heaviness. It doesn't become a 'must have', but it does become an option that some would like.
