None of the optional features replace existing features unless they clearly state as much. Cantrip Versatility is an optional additional feature that allows some classes to swap a cantrip at the same time as they gain a regular Ability Score Improvement.
I just realized how confused I am. Here is the optional feature, "4th-level cleric feature Whenever you reach a level in this class that grants the Ability Score Improvement feature, you can replace one cantrip you learned from this class’s Spellcasting feature with another cantrip from the cleric spell list."
But my Forge Domain already lists as available all the cleric cantrips which I can swap around after every long rest. Not sure what this feature really does.
The fact that DDB lets you, as the player, edit your cantrips doesn't mean that the game allows you, as the character, to change them. I believe the spell preparation rules are intended only to apply to spells for which you have spell slots.
You prepare the list of cleric spells that are available for you to cast, choosing from the cleric spell list. When you do so, choose a number of cleric spells equal to your Wisdom modifier + your cleric level (minimum of one spell). The spells must be of a level for which you have spell slots.
Once you choose a cantrip, there is no general rule that allows you to change them. The optional cleric feature you mention is a special rule that allows it under the right circumstances.
Not entirely clear on this: if enabled, does this become something I can do in addition to taking a stat boost or feat, or instead of?

How does one swap a cantrip in DnD BEyond. I cannot seem to find how to do that (Forge Domain Cleric, Optional Features. Thanks!
You can do it from your character sheet by removing a cantrip and adding a different one in the spell preparation area, can't you?
