I’m a new DM and still learning the vast amount of info in the multiverse of DND. I’m stuck with creating wizards and how many spells they’re allowed to have. In the players handbook, for example, it says a 6th level wizard can have 4 cantrips, 4 level 1 spells, and 3 spells at level 2 and 3. However, I’m stuck on the amount of ritual spells they can have. I’ve looked in books and online and can’t seem to find a definitive answer. Or maybe I have and I just am not interpreting it correctly. Can someone please give me some advice?
First, you have made a common newbie mistake of thinking spells are assigned to spell slots upon learning.
Spell slots are used as fuel to cast spells. But the number of spells you know/prepare are not limited by it.
For example, you can know/prepare 4 spells and have 2 slots, then cast the same 1 spell twice (using up both slots).
Wizards are a little complicated. They learn spells by adding them to their book, then can only prepare a few of them to be ready to cast (with slots), but can still cast rituals that aren't prepared. The number of spells they can have in their book is effectively all of them, limited only by time and money, but they start with 6 for free and add 2 more free spells to their books each time they level up.
A 6th level wizard will have no fewer than 16 spells in their book (possibly more if they spent time and GP to copy them), and can probably prepare any 9~10 of them (level + INT modifier).

Maximum spells available to an L6 wizard are:
Cantrips known: 4 at once (can change 1 of the 4 to any other wizard cantrip every long rest)
Spells known (in book): 147 (this is the number of L1, L2, and L3 wizard spells in the game)
Spells prepared per day: 6+Int mod
Spells cast per day: 4 L1, 3 L2, 3 L3 + after using Arcane Recovery, 1 L3 or 1 L1 + 1 L2 or 3 L1.
There's nothing special about ritual spells here - the only class where that would matter is Warlock, and then only if you took the Pact of the Tome. The big thing to note about ritual spells on wizards isn't how many they can know (which is all of the wizard ritual spells), but that they can cast ritual spells directly from their book without preparing them.
Do you know if there's a way to limit the spells during character creation to the 6 they're allowed? I have a few new members in my group and since DND beyond doesn't stop them they just kept adding spells.

No. There’s not actually any mechanical limit to the number of spells they can add. The limit is the time and money it takes to acquire and scribe spell scrolls into their spellbooks, and time and money are not things the character sheet models as prerequisites for adding things.

The character builder just builds the character, it doesn't know if this is a brand new character or if it has been a few sessions.
