Can a Large Creature wield two-handed weapons in one hand? Think they were capable of doing this in earlier editions but have not been able to find anything written in 5e.
Yeah there's no rule about larger creatures using two handed weapons from a smaller creature differently. There's not even a rule for medium creatures to somehow use a two handed weapon in one hand, but there's a rule for using a weapon from a larger creature than yourself which is simply to do so with disadvantage on attacks. Technically you shouldn't use the damage stats of the weapon from a creature either, unless it's a magical weapon giving those stats as a specific item. The damage you see monsters dealing with weapons isn't supposed to be an indicator that regular creatures can do the same damage with those weapons. It's just an monster stat for it's use of the weapon. So grab some long sword from a large creature that was doing 6d6 damage with it and really you should wield it with disadvantage and just do Longsword damage.
It's up to the DM. One DM I have rules two handed weapons can be used in one hand at disadvantage like a weapon sized for a larger creature, another DM I have rules a two handed weapon in one hand is improvised use of it in an unintended way and I need to treat it like an improvised weapon.
As others said, there’s nothing currently like that. You are correct that it used to be a rule in earlier editions where weapon size was relative to character size, but that’s gone away.
For anyone interested, basically, a medium creature could use a medium weapon in one hand, or a large weapon in two hands, or a pair of small weapons for dual wielding. Small creatures could used a small one hand, a medium two hands, and couldn’t use a large weapon at all.

No, there is no rule about that.
Typically a Large NPC/enemy can be assumed to be using a weapon scaled to their size.
