If you added a bite and at least 2 to 4 claw attacks (it has 6 legs after all), a climb speed and advantage on stealth and maybe a pounce… how much higher would you make the CR for it? The Manuals show how to modify things like size and HP but I’m trying to give it extra attacks and scarier as a monster.
Keeping CR accurate isn't super important, but (assuming you don't adjust other stats, such as hit dice) you basically just figure out the total bonus damage over 3 turns and divide by about 40. Thus
Claw Attacks: if we set them to 1d6+4 each, two claw attacks per turn (6 total) is +51 damage (its base is 66)
Climb Speed: no effect.
Advantage on stealth: no effect.
Pounce Attack: depends on the mechanics of the pounce. If we assume mechanics similar to a tiger, it would be something like "If the displacer beast moves at least 20 feet straight toward a creature and then hits it with a claw attack on the same turn, that target must succeed on a DC 14 Strength saving throw or be knocked prone. If the target is prone, the displacer beast can make one bite attack against it as a bonus action." We can probably assume one use per combat, so if bite damage is 2d6+4, that's +11 damage.
About +1.5 CR. To get it up to a clean +2 CR (total 5), increase hit points to 102 (12d10+36), which will have a side effect of +1 proficiency bonus (giving +1 to hit and +1 to save DC).
