Is there no longer a way to create my own Holy Water in the 2024 PH? In the 2014 book, a cleric or paladin could expend a spell slot and 25 gp in materials to create holy water. I couldn't find anything in the new PH about doing this. Am I missing something?
Best bet is to ask your DM if they'll still allow the 2014 rules for that. I'd certainly say yes if one of my players did and we couldn't find a 2024 ruling
Also you've started 5 threads all with identical titles, each asking a different question. You'd probably be a lot better off with one thread asking five questions

You just buy Holy water for 25gp from the market, temple or whatever.

In 2014, you expend a spell slot and 25 gp to create Holy Water.
In Xanathar's Guide to Everything, they added Ceremony, a first level Cleric and Paladin spell, which has the exact same 25 gold of powder silver and it can create one of 6 effects. One of which is Bless Water to create Holy Water. Since this is a ritual, you need to have it prepared, but can either spend an hour and spell slot to create Holy Water or spend 70 minutes (casting it as a ritual) and not expend a spell slot.
On the one hand, 2014 didn't specify a time requirement, but required a spell slot. On the other hand, Xanathar's version takes at a minimum, one hour, but does not necessarily cost a spell slot. Plus, the spell is neat, allowing you to actually do priestly things. (I think it should be on the Druid's list as well, though).
The playtest rules for Bastions included the Sacristy, which enabled crafting of Holy Water (with an option to upgrade its damage potential - Holier Water, perhaps?). We might well see that in the new DMG.
