I have one question. If the spell doesn't specify that they realize they were charmed, do they know they were charmed after the effect ends? The spell charm person species is does, but things like the college of glamor Enthralling performance do not.

Many different spells can inflict the Charm condition, but the Charm Person specifically says that they know it was cast on them.
There are other rules about spell-casting which say that a character doesn't always know what spell is cast on them (e.g. if there is no visible effect).

The spell says “the person knows they were charmed” but the spell isn’t hostile. Does the banker run off to the authorities an claim you attacked his mind with magic and he wants out of the deal? To you let it stand because the player and the spell had the banker charmed into the situation?

In some ways this isn't any different that a person being the victim of any con-artist, the only difference here is that the con-artist is magically assisted. Probably in the case, yes, the bank owner does go the authorities. What happens next probably depends on how high-magic the world is.
However, it is also fair to point out that there are people who are coned, loose their life savings and are so ashamed they don't tell people about it. So the personality of the bank owner may be relevant here.
Finally, it probably takes more than just a charm spell to pull this off. I would happily loan some money to many friends, more if they were in a dire situation. I would not give a friend my business (in fact, I'm one of those people who thinks you should not do business with friends and family, unless firm contracts are in place, that's how you keep from ruining friendships and family relations). So someone trying to charm me out of my business would have to go into a much more complicated setup to get me to sign it over.
On the other hand suppose I was very superstitious, and now you've charmed me into think we are friends, and that my family is under a curse and it's the business that's cursed and I need to sign it over to save their lives. That's might work. But that assumes that I'm superstitious and believe in curses.
On the topic of the banker that would probably be a social encounter and require several social checks such as persuasion, deception, intimidation and insight but because the banker is charmed, you would have advantage on all of those checks.
