I am curious as to whether or not raised undead can score critical hits, for example, if I were to raise a skeleton, and that skeleton rolled a twenty on its attack roll, would that count as a critical? Furthermore, if you do have information regarding this, could you please point me to the source material?
Yes, they can score critical hits. All creatures can. Basic Rules.

You don't know what fear is until you've witnessed a drunk bird divebombing you while carrying a screaming Kobold throwing fire anywhere and everywhere.
Thanks Kaboom 979 and Sigred, that makes sense and I really should have just common sensed this question, but I thank you both for offering clarity on this issue.
No prob! Undead were immune to critical hits & sneak attack in 3.5e, but nothing is immune to those in 5e. It's definitely for the better, as checking for immunity to crit/SA was such a niche thing to remember. Creatures that had those immunities are now balanced around better stats & abilities.

Thanks guys,
As far as I know, any creature that makes an attack roll has the possibility of scoring a critical hit.
