Yes, you can absolutely use the Dueling Fighting Style with any one-handed weapon and a shield. The only requirement is that you be wielding (not just holding) a single melee weapon with one hand, and no other weapon. A Shield isn't a weapon. From the Sage Advice Compendium:

How about Dueling and Versatile? Does it still work when using the weapon with two hands and dealing 1d10 damage?
No, you have to be wielding the weapon in one hand to get the benefit of the dueling fighting style.
