For this you need three casters: first one casts blur or any other buff on themselves that gives disadvantage to attackers. Hopefully they have proficiency in con saves as well. Caster #2 casts barkskin on them, bringing their ac to 16. Caster #3 does the heavy lifting with polymorph. Ideally you want to turn them into a giant ape which is cr 7 but if they're not level 7 you may have to settle for mammoth cr6, or elephant cr4. The point is that if disadvantage is more or less equal to a -5, then your huge stomping friend now essentially has an ac 21. Feel free to throw any other buffs you have on as well, have fun stomping on the enemy castle.
Alternatively you can have any super sturdy pc take the mounted combatant feat and ride them and take all their hits for them;)
AC 16 plus attacks have disadvantage is hardly "indestructible," even assuming that the foe doesn't have any effects that go off saving throws rather than AC.

You know, you guys are right I really phoned this one in. I apologize: The wizard casts polymorph on the weakest level 7 character (a plot relevant tagalong NPC perhaps? Giant ape if lvl 7, Mammoth if lvl 6, Elephant if level 5, T-rex at 8!!!). We shall call them Voltron. Have the druid throw stoneskin on the fighter (or a barb then you don't need stoneskin) who took mounted combatant and is wearing platemail, shield and defense style. Cleric casts shield of faith bringing their AC to 23 (21 for barb cause half plate). The bard casts greater invisibility on the fighter, who hops on Voltron's back. The rider's name will be Dr. Wily. Mounted combatant says: You have advantage on melee attack rolls against any unmounted creature that is smaller than your mount. You can force an attack targeted at your mount to target you instead. If your mount is subjected to an effect that allows it to make Dexterity saving throw to take only half damage, it instead takes no damage if it succeeds on the saving throw, and only half damage if it fails.
Dr. Wily is now intercepting all attacks against Voltron, with AC 23 and disadvantage from greater invis (no the invis doesn't make sense but RAW I believe it works - alternatively Dr. Wily just dodges each round, same result), taking half dmg from stoneskin/rage, has advantage on their own attacks (good time to use a lance, or they can just help Voltron attack), and if they do get low they can start letting voltron take the hits till the cleric heals them back up. If somebody fireballs Voltron, they take half dmg at most or zero if they makes their save. If SOMEHOW they manage to wear em down in spite of all that (maybe they have to walk through lava?) the wizard recasts polymorph and they're back to full HP. Oh and just for fun the druid can be Shepherd and also use their bear spirit power to give everybody 5+lvl temp hp as a bonus action.
How's that? :) Oh and if you're really worried about tons of spells, throw fizban's platinum shield on the mount, now they take half damage from fire ice etc. Also if they DO take down the mount (dispel magic), Dr. Wily is gonna be the whole thing all over again just normal size. Feel free to use the next polymorph on them for a lower AC reboot of the same show (good time for barkskin or mage armor).
I have just been informed most npcs don't have levels and you go by CR. This is where the bard's charm monster on the dumbest high cr monster you've run into on the way comes in.
