I like giving the more monstrous races unconventional classes and backgrounds, like a Wild-Magic Sorcerer Tabaxi that's just a magically transformed House Cat, or a Valor Bard Centaur Newsie/Courier.
Any ideas for a Minotaur that's not just an Axe wielding barbarian?
I kinda like the idea of a Minotaur who's love of labyrinthine patterns draw him to magic and wizardry, but do you have any cool ideas I could steal?
Perhaps some kind of rogue who specializes in dungeons and navigation. Expertise in survival and perception (maybe history or investigation). Get cartographer tools proficiency from background to make maps.
There's a guy who plays a minotaur blood hunter (Order of the Lycan) in the party I DM for. The race and class have great synergy. In particular, he has used his Crimson Rite to light his horns on fire and then used the minotaur Goring Rush feature to close the distance and hit the enemy with his horns. And hybrid transformation gives him good melee protection even with medium armor. He leaned into the nautical background of the UA race and he's now the captain of a ship the players recently acquired.
He's not a werewolf though, he's a were-lizard. A man/bull/lizard combo. Try to picture that one for a moment and then look at this thread to see what he really looks like.

Ah. That was not what I was expecting. I pictured a minotaur with lizard eyes, tounge, arms, and tail.

Now I'm thinking about a Minotaur Ranger that looks like a Moose and has a Canadian Mounty vibe.
A Minotaur wizard would be an obvious choice. Magic the Gathering has had them as part of their lore for a while. I personally love the idea of a Minotaur with arcane runes scrolled (possibly his favorite spells) all over his horns.

the Hurloon Minotaurs we’re exceeding slow to make decisions. Very patient. Sage like scholars and historians that lived up in the peaks of mountains like Tibetan monks. That could read thoughts and commented on one inpatient fellows thoughts of “we’ll rot to death before they decide in this vale of stupid oxen”
