Heracles: Barbarian, Path of the Berserker, max out his Str, Con should be second highest stat, dex should be moderate bonus, low Int and Wis (8 or 9), cha: 9 or 10...He wasn’t well liked by many people, or gods.
Atlanta: Wood elf Ranger (Hunter), with Archery.Give her the Mobile feat (additional +10’ to speed), Favored enemy: Beasts or Monstrosities
Daedalus: Artificer. The one with the armor. He’s sullen and irascible since the death of his son Icarus. He seeks revenge against King Minos.
Theseus: Paladin, either oath of glory, or devotion.Theseus was known for his wisdom, and benevolence.Make Cha his highest stat.Don’t dump Dex or Int.He was a clever fighter as well.Give him the Grappler feat, he was a great wrestler.
Perseus:Straight up Champion Fighter.
Jason: Paladin: Oath of the Open Sea.Or Swashbuckler Rogue with the sailor background.I’d go with Rogue since in the stories, Medea does most of the heavy lifting.
Are you trying to ask yourself a question?
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.

These are awesome, thank you!
If I were to assign races and classes based purely on the mythology:
Heracles: Scourge Aasimar Totem (Bear) Barbarian
Atalanta: Human Kensei Monk (Mobile feat lol)
Daedalus: Human Alchemist Artificer
Theseus: Half-Human, Half-Aasimar Ranger
Perseus: Protector Aasimar Profane Soul (Celestial) Blood Hunter
Jason: Human Vengeance Paladin
