I'm playing a human cavalier fighter that is currently lvl 5. Since I want to be a sword and board tanking cavalier I picked protection as my fighting style. I'm thinking however of changing my fighting style at lvl 6 with the ASI since from lvl 7 onwards I probably want to use my reactions for Warding Maneuver. I'm thinking of either going interception (still reaction but less often since you use it after someone gets hit) or defense (really good, but a bit plain for my taste). Which of these is better in your opinion or is there an awsome fighting style I'm completely missing?
If you want something a little spicy, choose Superior Technique and pick the Bait and Switch maneuver. If your table allows Feats, then choose Fighting Initiate and then you can pick whichever defense oriented fighting style suits your fancy.

Keep in mind that Warding Maneuver can only be used ConMod times per Long Rest, so it won't always be contending for your Reaction. And yes, later on when you get Hold The Line you'll have more chances to use your Reaction, but honestly when I played a Cavalier the enemies weren't running from me very often, because they knew they had to deal with me or I'd wreck their faces. My Goliath Cavalier was an engine of destruction :)
Protection and Interception are good IF you're likely to have an ally within 5 feet of you. In my games when I'm a melee fighter I'm more likely to have my ally trying to get on the opposite side of the enemy to flank them, so they'd be out of range for those fighting styles. Defense is pretty straightforward, more AC never hurts. But if you're a sword & board Str-based Fighter who's probably in Heavy Armor, your AC is likely to be pretty solid already. Dueling would probably be my choice. Two more points of damage per hit may not seem like much, but it gives your one-handed d8 weapon the same average damage as a greataxe(without GWF). Flat damage boosts may be boring, but they're dependable. As for Superior Technique...meh. One use of a single Battlemaster maneuver per short rest? Pass.

Superior Technique?
Defense if you’re tanking.

Dueling or Defense is my suggestion, both help a tanky sword and boarder. Either +2 to one handed damage or +1 AC never goes out of style!
