I'm working on setting up a custom Cloud Giant race for a higher level campaign I'm starting up. So far everything's worked out okay, the one thing I'm missing is whether there's a method of setting the custom race's Strength score to have a higher than 20 cap (ideally 27 to match the monster entry)?
It seems to be willing to let me give the race a +7 Str score adjustment, but it caps the Str at 20 and removes Str from the list of Ability Score Increase options.
That all makes sense for a regular character, but I'm hoping there's a mechanism for custom races to put in exceptions to the normal stat limit rules?
How would you handle the Ability Score increases while leveling up then? Just have the player not take them? And for each one they skip put in a misc bonus to cover it?

You can override ability scores on the character sheet. It's not quite the same thing, but easy to do in practice.
