I did a quick skim of the three Mythic monsters that are available in the database, since I haven't interacted with them before.
In summary, a "Mythic Creature" is one that has a Optional Feature that can be triggered to escalate an encounter. While this feature is triggered, the creature typically becomes more powerful by regaining health, temporary hit points, or by some other such method. They also get a couple of extra legendary actions to choose from.
For example, the Mythic Medusa-type creature can shed its skin to flee and regain all of its hitpoints, instead of dying. For the next hour, it also has a more powerful melee attack, and an enhanced Gaze mechanic.
so all mythic actions happen when the monsters hit points reach zero? if that is the case would it count as a mythic action if the monster explodes when its hit points reach zero?
A Mythic Action is a Legendary Action that can only be used when a monster has activated their Mythic Form, typically representing an escalation to their net dpr or other combat abilities. The trigger for the Mythic Form is a trait since it’s passive/reactive, and they all typically have a unique name. And no, a death throes type trait is not the same as a trait to active a Mythic Form.
Like all the others have said, mythic actions are basically legendary actions that become available when the creature activates phase two of the bossfight.
Activating the second phase is typically placed in the creature’s traits.
You would want to use mythic creature/actions for 2 main reasons, to add more difficultly to an encounter or because the monster is mythical and stronger because of it. for example, in a DnD campaign I run there are forms of magic only held by select monsters and individuals that are supremely stronger than normal and because they hold these mythical magics they get mythic forms and actions to show how powerful they really are.

See Title (And no, I do not have Mythic Odysseys of Theros yet).

TL;DR "This isn't even my final form!"
