I'm not supper good at the creation/coding side of things. Is there a way I can add spell slots to a homebrew nonmagical type? (Similar to an eldredge kinght)
I've been able to add spells, but they are unlimited use.
I don't know how to off the top of my head, but you could try making a copy of eldritch knight or arcane trickster homebrew subclass and poke around the options it has set up to reverse engineer how to add it to your own subclass.

Give it a feature called "Spellcasting".
That's it.
Yep, did this, but no spell slots, and cant manage spells, just get infinite casting of the ones you choose when you level up.
Make the character a little over power.

And, nope still no slots... shucks darn and curses.
And so we continue to play.
You have to give it a feature called Spellcasting, and you have to actually give it a spell list.
