I'm planning on being a GM. I've bought a pile of DnD Books (physical) and I'm really not planning on reading any online books
The only options I'm interested in for DnD Beyond is unlocking the entire plethora of features, race, class, magic items, etc... that books have to offer for player to choose and get that Master Subscription so that they can join my campaign and do whatever
The question I have is would I be missing anything if I would just take the Sourcebook Bundles, or what would I be missing (I'm guessing custom magic items)
And yes, I'm waiting for cyber-Monday because I'm not paying full price just to unlock stuff that I already have...

If you just want player options, buying all bundles (spell, subclass, etc.) would cost you $ 286. But if you include magic items ($ 197) and monsters ($ 314), the cost would shoot up to $ 822. It's up to you whether that's a good deal for you.
You can buy just the individual options. They're $1.99 each, or a fairly heavily discounted price for all of a certain kind in a given book (eg all the races). When you buy an individual option, it discounts against the whole book. So if your book is normally $29.99, you buy an option for $1.99, then it'll be $28.00 to buy the rest of the book, so you're not penalised for buying books piecemeal.
With that in mind, it might be best to just buy individual options as you need them. You're not after the compendium content (the actual text in the book), so you don't need the whole book. Just buy the bits as you need them, then when it becomes cheaper just to buy the book, do so. Eg, if you want to play as an Aarakocra, rather than buying MotM, just buy the Aarakocra race. It'll spread the cost out and, if you never buy many options from a given book, may save you money.
Note: There is a minimum spend of $1.99, so you need to buy the whole book when it would be $3.97 or less, or it will be more expensive overall.

Your other option is to just let your players pay for the content they want. It's very nice of you to unlock everything for them, but honestly, if they aren't willing to pay $10(ish) for a game they play for hours and hours, then they should be happy with the options in the Basic Rules.
I've bought many books on DnDBeyond, but I told my players they can pay for the subscription if they want access to my content. My three, very well off players, declined to spend a dime. I just said "ok" as it's not my problem to solve.
