The campaign I will be running is contingent upon the players NOT knowing anything about the NPCs or the other players. The only thing they need to know is what they can see and what characters choose to divulge. Is there any way for me to hide all Character info? As of right now, players can still see Character Name, Level, Race, Class. Thanks in advance.
You could make a Homebrew race, call it whatever you like, and assign the features of the true race.
Name class and level are another story.
You could not give them classes, and assign features of their class to Homebrew magic items they equip. But that is exceedingly complex, and likely impossible with current tools.

I thought so. Thanks!
I hadn't thought of that. It does seem like a lot of work, but it may be worth it. Thanks!
