I will be putting my party up against a tree-like entity of dark necromantic influence, planted by Orcus a long time ago (just the stats of a treant with some minor modifications, turning it undead with a poisonous or necrotic breath weapon).
I will probably begin the campaign at level 2 and will hopefully end it off at level 11 or 12.
Treants are CR 9, and let's say there are 4 level 12 characters. I would like to add some monsters to the combat that will definitely help the undead treant, however nothing significant because I want the treant to be the main threat. But any fiends, monstrosities or undead can work with me, and the CR range is from CR 1/4 to CR 9. It can be custom or from the books, even some of you with homebrew monsters created can come forward with your ideas.

I've used homebrewed (in a note I jotted down, not HB here on the site) tree roots in a similar way to legendary actions for grappling players (and/or pulling them underground).
The bodytaker plant from VRGtR is a lot of fun, but that would be more its own thing rather than a minion for your modified treant

Bodytaker plants are its own thing, but I could try to give them a sort of purpose. Will probably stream the campaign on a platform, so we shall see what I come up with.
Almost any monster could: a great tip from the original Ravenloft Campaign Setting (after I6: Ravenloft to be picky) is that a great way to get players off their game a tiny but useful bit and built a sense of fear is to stop naming monsters. Don't say, "A goblin attacks you..." but describe the monster, make the players try to guess if it's a goblin, an orc, something they've never seen before.
For some specific answers:
Golems work well for Frankenstein-esque creations.
Gargoyles fit for 'haunted house' extensions-of-the-house.
Mind Flayers and Aboleths add a little Lovecraftian insanity.
Hags can fill the role of witches in many stories, but moreso. For best results, make it so they need to be outsmarted, not just killed.
Ogres, described as just filthy brutes, could play roles as 'muscle' for more "smart" villains.
Lizard Men work well https://routerlogin.uno/ for a 'primitive tribal' race. They also have easy ties to dragons and such, should you want to go that direction.
Remember, you don't have to use the background from the MM straight (especially if it's your own setting).
Depending on the kind of feel you are going for you could add some yellow musk creepers and/or yellow musk zombies to the fight just to get some fodder in there.
