I found a free print out of monster stat cards from B/X and I'm wondering how to use them in 5e? They have some stats not used today and appear to be lacking a few too.
B/X is a very different game from 5e. So in short, you wouldn’t use those cards, you’d just use the 5e version from the monster manual. Depending on the monster, it may even be available for free as part of the basic rules.

Yeah I'm looking at the picture of the statblock and it's got a whole load of stats that don't exist in 5e and even the ones that do (like AC) are evidently quite different (the Skeleton has an AC of 7, which is nowhere near the 5e version with an AC of 14, so is evidently handled differently). You could bodge it to include the important stats and rewrite the ones that do share names with 5e stats so it matches 5e...but at that point, I'd imagine it would be about the same effort to start over but with cards made for 5e.

I’m sorry for your effort, but it would like trying to play settlers of catan on a monopoly board. They’re very different games. But essentially, the work to port them over has been done. Just look at the 5e version of the monster with the same name.

AC used to start at 10 and go down. So a 7 is closer to a 13, so not too far off. Of course there’s lots of other changes, but that accounts for the 7.
The only edition of D&D which I think would be convertible to 5e in a relatively mechanical way is 4e (it still has differences, but they're fairly straightforward to understand).

Well the obvious answer is to use the versions already in 5e 2024. The monsters from the older 1e and Basic games are weaker for the most part. Vampires being notoriously an exception due to their no saves against level draining powers. IIRC they drain two levels per hit!
