It keeps saying there are new updates so, I take the time to update things like Curse of Strahd and Storm King’s thunder but, clicking on a stat block brings up the 2014 version. Even in newer adventures like the lost Caverns of Tsocanth, and the Uni adventure made for the 50th Anniversary, it’s not updated. I mean, what’s the point of the update if it doesn’t update to the current rules. Especially when checking these forums, “backward compatible” means using the updated version of the rules where possible. Makes it much harder DM AL and the like when I have to constantly update by hand.
Speaking of which, why aren’t the character sheets updated to the new format? The 50th Anniversary Aventures have them with the Classic Cartoon Characters so, it is feasible.

They won't. Old adventures can still be run using the 2024 rules, but the stat blocks they reference will always be the ones printed with them or in the book they were referencing (which is typically the 2014 Monster Manual). This is working as intended and not a bug. You, as the DM, have the choice to use the updated blocks, but it can also be run smoothly with the blocks being referenced in the books already.
As for the updating part, I'd recommend setting up bookmarks with the updated blocks if you're using them. For instance, as a DM for Westmarches servers, I have a folder in my bookmarks toolbar named Encounters that then splits into various subfolders for different planned sessions.
Makes total sense for the printed copies but, not the electronic versions, since part of the reason for the sub is the convenience of the new rules online.
Plus, it doesn’t explain the character sheets being from 2014 when we use the 2024 rules.

The books were published using the 2014 stat blocks and upgrading the adventures to use the 2024 stat blocks is an optional choice. As such, the DDB versions still link to what monsters were intended when the adventures released. It's down to the DM to decide if they're going to "upgrade" the monsters to the 2024 versions, which they may not do if they're still using the 2014 rules.

The new character sheet layout changes are mostly aesthetic in nature, so they've likely not seen a value in changing them.

I'm not sure what you mean by this? What 50th Anniversary Adventures and what character sheets are you referring to? If you're referring to ready-to-download PDFs, that's entirely different from the PDF exports from the DDB character sheet.
Oh god, can you imagine the complaints if they updated all the old stat blocks? People still complain that weapons now have a totally ignorable mastery property even if they're playing 2014 without changing something as big as the stat blocks

Totally, there'd be uproar.
Don't get me wrong, it'd be amazing if each compendium could have a floating toggle that allows you to set your preference for ruleset, kinda like how you can flip rendered text on and off. But until that's an option I honestly think it's for the best that pre-2014 adventures link to 2014 content and post-2024 adventures link to 2024 content.
People act like things are simply done without effect. Also, if they can’t monetize it, they won’t do it. Because the change incurs costs to the developers and coding. Then if you make it online only and ignore the people who rely on print media is bad business practice.
so, if they decide to rerelease something is “when “ and”if” older adventurers get updates. Otherwise DMs are tasked with changing whatever is necessary to each of their campaigns.
