I find myself very intrested in the rules for creating sidekicks that arrived with Tasha's, but I do find one thing a bit odd. In the section describling a ''spellcasting'' sidekick they have options for Wizards, Clerics, Druids, Warlocks and Bards. Do you think its intentional they left Sorcerers out or is it just a ''opsie''?

Oh no. If it isn't in it's probably intentional. Wizards really doesn't like sorcerers. Maybe sorcerers are more rare? Not everybody has the bloodline for it. Hopefully that's why...
I could see them dojng that, but it feels a bit off concidering the flavor text ends with '', or a person with magic in their veins.'' Which I would assume speaks to sorcerers or similar talents. I figured one could have a sidekick sorcerer that have a undefined bloodline or perhaps just a weak one.
Oh well as there is no official tool (or atleast none I can find) to create sidekicks I dont see why I cant pick spells from there list anyway.

1. There was already a sidekick rule, in the essentials kit box set
2. Yeah you could homebrew a more powerful sidekick

Is there going to be a tool to create sidekicks? Or a tool to add a sidekick template to a monster?
