If you want to add class features to a monster, you can do so using the homebrew tools. Make a copy of the monster and apply the class features as described in the Dungeon Master's Guide.

Do you know if that will change with the release of TCoE? One of the examples talked about was a Wolf with Sidekick levels.
Unfortunately I'm not a divination wizard (all mods are school of abjuration, helps us ward against trolls) so I can't give any portents of what Tasha's will hold. However, the sidekicks UA had tons for things like animal sidekicks and a more general system. There's little guarantee this will offer any insight into what's to come, but still might be worth a look

You can already create sidekicks; they're monster stat blocks with the sidekick tag.
The levelling of sidekicks is handled by making one stat block per level, this is how it's done with the Dragon of Icespire Peak sidekicks
