First time making a homebrew item, can someone experienced with homebrew help me with whether or not this seems too unbalanced.
Potential out-of-combat property to the NON-bladed version will be as follows: if combat is not initiated and you hit someone and contest ability (dex or str) against their Con, you may knock them unconsious.
I think that it looks pretty good for a first time. The property you suggest is very powerful (they essentially go prone, and unconscious. Free advantage unless you're ranged!). So I wouldn't use it. The normal knuckles look fine, but I would suggest changing the description, so it looks professional (I just think people will like it more, and it seems better). E.g: Brass knuckles are connected rings that fit over your fingers. They have a thick 'knuckle' on top of each ring, used to punch your foes.
For bladed one, I would make the damage: 1d4 bludgeoneing and 1d2 piercing. Also remove the bleeding effect , as the improved damage compensates this. You could make the damage 1d4 bludgeoneing and piercing, but remove the light property.
