Way of the Astral Self, often referred to either humorously or angrily as “Jojo’s Monk”, let’s you summon spectral arms that punch at range using your Wisdom. As you level up, you can summon more parts of the Astral Self, eventually getting a full body that gives you extra damage, elemental reduction, and improved vision.
I just built an Astral Self Monk, and it’s pretty neat because you can focus primarily on Wisdom, which I used to multiclass more effectively with Druid.
I’m less familiar with Way of Mercy, which looks like a Plague Doctor, but I believe it give you some healing and condition-curing capabilities, as well as let you deal some extra necrotic damage that can eventually poison. At level 17, they can resurrect people, which is neat, though it’s really late to get it.
Astral self let's you pay Ki to buff yourself, summoning astral 'arms', and it gets more expensive and powerful as you level up, basically a Stand User from JoJo's or Kenshi from Mortal Kombat.

I’m sure a Google search would help you find reviews of the classes which would cover the information you are looking for. Or YouTube videos
