I'm trying to design a new monk character for myself. The idea I had for him was that he's practically unhittable, effortlessly dodging attacks with one hand behind his back, kinda like how batman does in this scene from the criminally underrated Batman vs Teenage Mutant Ninja Turtles. I'm thinking Way of the Drunken Master, but it has a lot of drinking related attributes I don't like. Any ideas?
That’s just using a monks ability called patient defense. It lets you take the dodge action as a bonus action which gives other creatures disadvantage to hit. (Works awesome with the Dwarven Fortitude Feat)
Combined with Drunken Master tipsy sway to let two or more creatures beat up on each other instead of you with the use of a ki point when they miss. Speaking of which, you could reflavor the drunken master stuff with the martial arts style of Sunanju from The Adventures of Remo Williams. https://youtu.be/1V4SU2_-Ppg
If you want to boost your AC just get your DEX and WIS as high as possible. Rings and amulets of protection couldn’t hurt either.
I do love the idea of a multi faceted dodge tank Monk. I made a homebrew subclass (Way of the Diamond Viper) that's all about being harder to hit, being able to better take a hit when they do, and counter attacking. I love the counter attacking aspect of martial arts, I don't think it's explored enough in baked in material. My homebrew is probably just eh, but I still love the concept.
I've always loved the idea of a Monk completely built around illusions. Afterimages, mirror image etc, though maybe that's me just wanting Final Fantasy XI's Ninja tank back.
Still the overall best tactic is to just run away with your high af walking speed, and something like the Mobile feat...though I know you're thinking more about standing your ground with sheer agility and technique. I think some of the new fighter optional features might make interesting options for a monk multiclass based around this concept. Defensive Duelist feat I think is useful (if not maybe invaluable) for a Monk, or plain simply getting the Shield spell. Or both. Or something like Shield of Faith. Patient Defense and high AC is good, but it certainly helps exponentially to have an ace up your sleeve for when a creature does get a hit in and every DM has their "rolling nothing below 20" days.

Just so you know, it's Sinanju, and that movie, while fun, is just a pale shadow of the books it's based on. The series was called The Destroyer, and it turns out Remo is not only the first foreigner trained in the Sun Source of All Martial Arts, but is also the avatar of Shiva.
He even punched Cthulhu. In the face.
It's the book series Blume and Gygax based the monk class on.
Your monk doesn't have to drink. It's just a fighting style. I've been playing around with a Kalashter monk whose fighting style came about because she hates fighting and getting hit but her Quari wants her to be a badass. Basically, it looks like she is drunk but she is really just trying to be the hero her Quaori wants while trying not to get hit. Another possibility is simply that your Monk's master was a drunk while teaching you martial arts (a la Jackie Chan). It keeps you from getting hit but it looks like you are drunk.

This is what I am doing with my Open Hand monk. His name isn't Remo, but I've listed my master as Chiun and his martial arts as Sinanju.
