Hey! I see information regarding how some Spelljammers can land on land, or float in water, but what about the ships that can’t do those things? Are there special made docking towers where these ships remain afloat like a zeppelin of some sort?

Why would you need a docking tower? All of them can just hover in place in the air indefinitely. If your DM rules that somehow the local winds are strong enough to move the ship, then and only then you'll need some equivalent of an anchor to hold it in place, but it certainly won't just fall on its own.
The only ships with meaningfully useful exotic movement styles are the Turtle and the Nautilus, for traveling underwater and to other planes, respectively (the Nautilus is so OP I'm confused why it's only Tyrant Ships you can't buy - Nautiluses on the open market mean very few other ships should exist on the open market).
In any area with common spelljamming, it's a reasonable assumption that most of the ships never land on the planets. In orbit, they can pull up next to a larger outpost with a gravity plane, and just bob up and down next to it. Orbit-to-ground cargo hauling is likely done by large barge-type ships.
(I don't believe it's confirmed or denied that this is so in the new books, but the existence of so many specialized Spelljammer ships suggests it's so.)
I disagree with the above. I think the fact that they're only able to land in certain places suggests that you would have to go to those places if you want to disembark normally. It will sometimes be inconvenient and require you to, you know, adventure a bit.
That was my impression. What's the point of a ship that can land on the ground if the other Spelljammer's can just hover above the ground indefinitely? Seems unrealistic. Obviously its dnd and can be tweaked to your liking, I just was hoping for some clarification on RAW. Personally I could see possibly having like "Docking towers" or ports that you have to land at maybe. I'll have to read about the Rock of Bral and it's docks.
