For a one shot our DM is letting us be a Christmas elf, don't worry about those features, it's not important. But, my character was bred to be a healer, but she took 3 levels for cleric of life, and 5 levels for the path of an illusionist that accompanies Santa to change what children see if they see him by accident. I'm looking at the spells and everything, and I have NO idea how the spell casting works. I've read over the rules in the book, but I can't quite understand it. Could someone help me figure out DC's, the spells slots, and how many spells are known?

You are a level 8 multiclass spellcaster, so your spell slots available are 4, 3, 3, 2 from 1st to 4th level spells. These slots are used for either class of spells, replenished on a long rest. As a level 3 cleric you know all cleric spells of 1st and 2nd level, plus four of your Life domain spells. You may prepare 6 cleric spells (cleric level plus wis mod), plus your domain spells are always prepared. As a level 5 wizard your spellbook starts with fourteen wizard spells; minimum eight must be 1st level, six may be higher level with only maximum two being 3rd level. You may prepare 9 wizard spells (wizard level plus int mod). Note that you have two 4th level slots, but no spells of that level, so will use those slots to upcast lower spells (so choose some spells that benefit from that). You also know 3 cleric cantrips and 5 wizard cantrips, one of which is Minor Illusion.
The multiclass spell rules are kind of confusing, and I may or may not be able to explain them better but I'll try.
For spells known and prepared, you just act like there two different character and than you add the spells together
So if you're preparing the spells for a 3rd level Cleric with a Wis mod of +3 you would be able to prepare 6 spells of either first level or second level. You also have 3 Cleric cantrips.
For the wizard it would be Wizard level 5 + Int mod of +4 so you would be able to prepare 9 Wizard spells of either first, second, or third level. You also have 3 Wizards cantrips (plus minor illusion which you get from the school of illusion.)
For spell slots you just count as a level 8 caster, so: 4 1st level. 3 2nd level. 3 3rd level. And 2 4th level. You can't prepare any 4th level spells but you can use 4th level spell for spells like cure wounds or fireball which are stronger when using higher level spells slots.
DCs and bonuses can be kind of hard to keep track of, if you're using a Cleric spell you use your Cleric spell attack bonus, (Wis mod + proficiency, so +6) and for Wizard spells you use your Wizard spell attack bonus, (Int mod + proficiency, so +7.) For DCs it's just the attack bonus +8, so Cleric DC 14 Wizard DC 15.

If you build the character in the D&D Beyond character builder (especially if you go level by level for wizard), it will limit your learnable spells correctly.
