Xanathar’s guide helps a great deal with downtime activities and such, but I am curious on some deeper lore and rules. What kinds of people pit fight? Is it just brutes and the like? What is the equivalent CR rating range for pit fighters? How do certain abilities apply to certain downtime checks? What happens if you die in the process of creating a very powerful magic item? How do you create a sentient item? Are magic items and spellcasting banned in pit fighting? How does marriage work RP wise? Are there any statistical benefits such as getting gold, accessing higher-level parties for carousing, or is the character called to defend their new families honor? Is Pit Fighting limited to underbelly activity or can it be public?

This is mostly entirely up to DM. The downtime activity isn't even an actual fight.
How do certain abilities apply to certain downtime checks?
Depends on the downtime activity and the DM.

You shouldn't die in the process of making an item... How to make magic items is up to DM.
How does marriage work RP wise?
Similarly to how mariage works IRL? I don't know what answer you are expecting here...

Carousing is all about connections for RP. How you reap the benefits is between you and the DM.
I'm sorry almost all the answers are "its up to the DM" but the setting and narrative of the game is controlled by the DM.
How do you think damage resistances would apply to pit fighting?
As a downtime activity? It probably wouldn't.
You make 3 ability checks to approximate how well you do, not actually fight (since that takes too long). If the DM feels like the resistance is relevant maybe one of the checks can be at advantage, but that is up to them.

Ahhh, that's why it would be different. Good call.

The same way the apply in any other context. Why would it be different?
