Say you create a Bag of Holding one day and you also make your dagger a ÷1 as well as you give it returning weapon. And you make another bag of holding the next day. Your allowed 4 items according to your Int and level.
Does this mean your at your limit or can you create more items.
Yes, but there is not currently a way to mark that on the feature on DDB (I think/hope they are working on that). You can have the PC in question manually add it to their inventory and make a note on both character sheets so you know it is an infusion.
It is identical to the real item in functionality. The main difference is that you can turn the infusion back to a normal bag (if you go over infusion limit or die).
You can't actually accomplish this example. A item can only hold 1 infusion at a time, so the dagger can't be enhanced and returning. You can also only use each infusion once, so only 1 bag of holding.
Question: If you choose the replicate magic item. Are you stuck with that one particular item till next level (i.e. alchemy jug) or can you choose another item from the list after the next long rest?

Each item is a different infusion, so you can only change it when you level up.
You can learn this infusion multiple times; each time you do so, choose a magic item that you can make with it.
Hilariously, depending on how lenient your DM is, your homunculus can be utilized AS your Spell-Storing Item. SSI says "a simple or martial weapon, or an item you can use as a spellcasting focus". Per Artificer spellcasting, "an item bearing one of your infusions" can be used as a spellcasting focus. The homunculus' heartstone is an item bearing one of your infusions.
Now, this is a grey area, since the homunculus isn't technically an item, it's a creature. RAW, people'd probably nitpick it and say no. But depending on what form your homunculus takes, it could prove awesome. Example: my preferred form for the homunculus has become the Devilishly Stylish Tophat - a literal tophat with a single artificial eye centered in the hatband, a pair of equally steampunk imp-like wings off either side of said band, and a long barbed tail in the back. The hatmunculus stays on my head when it's not otherwise doing anything, or flies up to land on a frontliner's head when I need to be able to deliver touch spells without getting close to Huge Angry Stuff.
Heh, should said character/hatmunculus ever graduate to level 11, one could theoretically cast the spell in their SSI by reaching up and tipping their hat at the intended target (thus satisfying the 'item you're holding' requirement). Star, being a classy lass from an affluent background, would absolutely be down wth Hat Tipping-based spellcasting, and I imagine my DM for that character would agree.

Also, you can only have two infusions up at a time. So you would be limited to the bag and the +1 Dagger or the Bag and the returning Dagger
at first level that is. As you progress you will be able to infuse more things at a time.
And at some point you can create permanent versions of magic items, given enough time and resources.

This. Homunculus has its actions limited to a specific list. It wouldn't be able to utilize dragon's breath either.
