How many active infusions can I have open? Am I stuck at 3, or can I do 3, wait 24 hours, then do another 3 and have 6 active infusions going, or would the new 3 wipe out the old 3? I have a tendency to over-think or misread things and my DM doesn't seem to see me asking this question.
(Your numbers make it sound like you're level 6, 7, 8, or 9, so I'll use those numbers as examples.)
You have 6 "Infusions Known." You pick these, much like you pick spells known, and you can change them around each time you go up in level.
You have 3 "Infused Items." This means you are "stuck" with only 3 infusions at a time (and they must 3 of you 6 known ones, and you can't use the same one twice, and...). You can essentially swap which 3 (of the 6) you are using each long rest.
To answer your direct question, the new 3 do "wipe out" the old 3. There's some fiddling around to make that work, but you basically get to re-pick all 3 each day (or not, and keep the same 3 all the time).

At level 10 you'll get 4 (and 8 infusions known), and so on. It's in a table. (And active infusions is always half of infusions known.)
