In the description of the Armourer speciality it says

However I can't see a way in DnD Beyond to change this without going in and editing my level 3 class feature. Is there a button to click that lets me swap between them so I can see the different armour attacks on my character sheet?
Yeah, there are several subclasses and races that allow you to reselect something from a feature, either as an action, or after a long rest etc, and we want those choices to be available on the character sheet (so you don't have to jump back into the character builder).
Also when you change your armor (or create it for the first time) it's best if you shout a catchphrase like "By the Power of the Forgestone, I...am...IRONGNOME!"

I like to setup my character in beyond, and then print it for sessions, however I often change back and forth between the two models witin one session.

Currently, no. You would need to print sheets for each configuration, or use digital DDB.

Just go to the Class tab and change your armor option there.
Watch your back, conserve your ammo,
