I suppose it depends on how you play - poison is a common damage type for monsters to deal, so you're a bit tankier than other halflings. If you never get hit with poison, you'll never get to showcase how you differ from other halflings. Play closer to the front line and it'll probably come up eventually.

...unless you deliberately cover the entire battlefield in poison thanks to cloudkill, but that is really only a viable strategy if you are a yuan-ti wizard with poison-immune undead goons. And if you wanna cast cloudkill you gotta be an alchemist, but if you want an poison immune robot buddy you can ride on into battle you would want to be an battle smith instead, and also casting cloudkill is a 17th level spell.
Yeah i am just overloading this presumably new player with useless information arent i? Yeah stout halflings are about as good as other halflings when it comes to artificing (slightly better if you are not using the lineage options from tasha's cauldron of everything, constitution bonus is handy), no race class combo is bad in the truest sense and you should not worry about making an "unviable" character, as long as you enjoy your character as it is that is all that really matters
