I have a Giff Cleric of Light who has been employed by a family to teach the sons how to use firearms, and to be a spy. The character has Thief's Tools and Stealth proficiency from the Criminal/Spy background. I'd really like to get Sleight of Hand to go with them. What methods can I do to get this?
I am thinking of taking the Skill Expert feat, but taking Perception. The lack of that proficiency has already hurt us a little.
Using the custom background rules allows you to take sleight of hand as a skill in place of a typical background's skill, (or any skill for that matter). I'd suggest you read up on the custom background rules in the player's handbook. It's entirely Rules-As-Written yet a lot of people forget about them

As the game is underway changing background or anything else from character creation would require the dm to allow it. No harm in asking but I would not assume e you can.
Assuming you can not change your character skill expert is probably the best option especially as you want 2 skills. Skilled is pretty much obsolete now. You could get sleight of hand by taking a level in rogue (or bard) but unless you want rogue for other reasons I would not go that way.
Training: You can spend time between adventures learning a new language or training with a set of tools. Your DM might allow additional training options. First, you must find an instructor willing to teach you. The DM determines how long it takes, and whether one or more ability checks are required. The training lasts for 250 days and costs 1 gp per day. After you spend the requisite amount of time and money, you learn the new language or gain proficiency with the new tool.
Routes to sleight of hand proficiency: Multiclass in to rogue - you get one proficiency at level 1 rogue when you multiclass and sleight of hand can be it. Multiclass to bard - you get one prof (of your choice) and an instrument at level 1 bard. It also maintains your spell slot progression. Skilled feat - 3 skills of your choice Skill Expert feat - 1 skill prof, and 1 skill expertise, and a plus 1 to a score
Other options: 1. Gloves of Thievery - a +5 to sleight of hand is generally better than proficiency. See if your DM will let you go on a quest to earn them. 2. Living gloves - another magic item option 3. Roleplay - Just don't have proficiency and get caught.

I completely missed the bit about getting one skill from the Rogue list! Thanks for that advice, it fits very well what I want to do with the character.

1. Take a level in Rogue (requires 13 Dexterity)
2. Take a level in Bard (requires 13 Charisma)
3. Take one of the following feats: Skill Expert, Skilled or Prodigy (if a qualifying race)
4. Take downtime and find someone to train you in it.
