I like Bugbear (new MotM) for great burst nova dmg, 6 attacks first round with 12d6 added from surprise attack is a nice way to soften up an encounter.
I immediately thought, "That's not right" but holy cow there is no set limit on the amount of surprise attacks that you can do in one round. I'm sure any sane DM would say no way, but RAW that seems to check out.
I think the Githyanki would be a great fit for an Echo Knight, both mechanically and thematically.
The race is thematically already tied to psionic powers, so the Echo Knights seems like a pretty logical extension of those powers into martial combat.\
Mechanically, you would gain access to the Mage Hand, Jump, and Misty Step spells once per short rest, giving you even more mobility options to help you move around the battlefield.

I am getting ready to play a Leonin Echo Knight. Curious to see how this plays.

Flying playable creatures, as Aakocra and Fairy, are great options for Echo Knight.
