My DM has allowed me to use the Warforge (Juggernaught) Race in 5e. Coupled with the Fighter Class and Fighting Style of Defender, tanking at low levels has proved effective. I've gone with the Eldritch Knight Martial Archetype for a little bit of diversity.
I went Eldritch Knight and Great Weapon Master. I regret not taking dueling though, as my team requires me to have a sword and board out the majority of the time. I use the SCAG cantrips booming blade and green-flame blade (haven't used GFB yet though...), as well as the 1st level spell Absorb Elements (crucial for a tank). It's a reaction and halves magic dmg, and gives your next hit a bit of a boost too.
Earth Tremor is awesome! i managed to knock a fire giant prone about 2 sessions ago, felt real good.
I played an eldritch knight that focused on archery. I could survive as a tank, but that didn't really fit the character... so our party had an interesting time.
I COULD soak hits, but i took feats for movement and was an elf so I always tried to just kite enemies around the map, killing them semi-efficiently.
Idk that mine qualifies as weird, but there is a house rule involved.
I'm a Vhuman S&B Eldritch Knight with Warcaster and Magic Initiate feats. I've also convinced my DM to house rule that I have evocation and conjuration as my primary schools.

Fire bolt, booming blade, prestidigitation, dancing light (there are others in my party that handle mage hand and minor Illusion)

So when I teleport it's with a flash of light and a boom of thunder, shield is a protective wall of concussive force, etc. Also all of the above is theoretical since I'm still level 2 😁 any build tips/advice are welcome!

Maybe look a for a spell that reduces incoming damage for a round or short time. It will come in handy during a Boss Fight or where you're out numbered
As a DM I encourage the group I play with to create custom races and even classes so long as they put fourth the effort to make it sound and not OP. I think it adds fresh and much needed additions to the game to make it more fun and interesting. Though that is just my personal thoughts on it.
I wish there was more regarding the 5e Eberron. I love the updated War Forged, Changeling. and Dragon marks, but it lacks anything to do with the Dragon shards and technology that exists for House Cannith. I'd love the stats and abilities for some of the crazy magic based tech; like the ever-bright lantern, lightning rail, and all the elemental powered vehicles.

I find with updating old content into the new 5e System, it's good to try one or two changes over 1-2 adventures and then look back over it. Homebrew content can be quite interesting and brings more to the world your Character plays in.
the only problem with a warforged fighter is that it is too generic. they were made for war and it ended, so it would go fighter. I can't play one for that...
I made a goliath eldritch knight and he plays really well. Early on we kill a dude with a belt of storm giant strength so he chills at 29 strength and with other ac increasing items, i got 26 AC he hits like a truck and i set him up with a homebrew weapon that imposes disadvantage like the cavalier’s unwavering mark. he is the best tank I’ve made yet

Knocking down a Fire Giant would have been sweet, boost the morale of the party!!

I always go for non-standard races if the DM allows. Warforged are great :)
the only problem with a warforged fighter is that it is too generic. they were made for war and it ended, so it would go fighter. I can't play one for that...
I have a soft spot for playing Githyanki. I've played a Psi-Warrior with a dip in War Wizard and it was really fun.
