I have been in love with the Echo Knight subclass since it came out. I'm thinking that (with the new found stat flexibility options), this class synergizes with Aarakocra just about perfectly. Fly in, spawn echo, fly out, no problem. 50 feet of flight + 15 spawn range + 30 echo movement means that targeting the enemy backline immediately works too easily. The only hitch is that Echo knight works best with heavy weapons (to maximize the bonus attacks).
Also thinking that an Echo Knight Aarokocra could multiclass into rogue easily for some extra damage, or ancestral guardian barb, at the cost of going STR based and losing some AC.
You'd likely want to go ranged fighter if you're making an Aarakocra, since they can't wear medium or heavy if you wish to fly.
As for the Echo, it just says a melee attack, doesn't HAVE to be a heavy weapon. Could use a rapier for that, which if you multi into rogue, could work well with sneak attacks as well. (I am unsure if you'd be able to apply sneak attack damage via the Echo or not.)
The way I see it, using the echo more or less IS going ranged. If most of the melee attacks come from the echo, then the character can simply fly 20 feet overhead, completely aloof from melee.
