Someone else already said it, but I think Tortle is a strong pick if you want to play a monk that only invests in Dex or Wisdom, but not both. By having a strong AC from the get go, and not needing to invest in two separate ability scores for Unarmored Defense, your character's ASIs can be freed up to invest in feats that synergize with your playstyle.

That is the major problem with monks. It is because they are all mad. Same thing could be said for barbarians paladins and Rangers. The only difference is that those classes have a strong core.
Depends what levels you expect to play and who else is in the party but unless want to put points into Int, Str or Cha a monk can start with +3 in both dex and con for a starting AC of 16 so only one behine a monk and an ASI in either will mean they will catch up by level 4.
In my experiance the biggest issue with monks is like rogues they are skirmishers but unlike rogues to attack and run they need to use a limited resource as getting out of range will save you getting hit far more than an extra 1 or 2 on AC. There are several ways of doing that goblins can disengage without burning ki, bugbears can attack from 10ft away and so only draw op attacks from enemies that also have reach, variant humans and custom linage can get mobie at level 1.
I've only played a monk once, as a tabaxi called Neo. A lot of fun. Ridiculous speed - base = 75'. But also I didn't just play my monk as someone who slapped around, but someone with a spiritual and contemplative side.
Bugbears in monsters of the multiverse can deal 6d6 extra at level 2 if they win the initiative. Plus the longer reach. They are likely one of the best monk races right now.

I say aarakocra. They get +1 wisdom and +2 dexterity, which is perfect, plus they get 50 flight speed which is really good, and they get claws, which is good for unarmed attacks.
i like Plasmoid for Way of the Shadow: can infiltrate a building through even a 1" wide gap, hold breath for an hour to hide in the water feature, extrude a 10ft mage hand equivalent to hoover up the guard's keys, and you're even resistant to poison which might be perfectly thematic depending on just how brutal your background fantasy ninja village was. on top of all that you have darkvision and advantage on initiating (or escaping) a grapple! that'll be pretty great with the UA grappler feat.
...also, there's nothing explicitly stating that you cannot unarmed strike while in blob form. pretty minor but it's not nothing.

My first choice would be tortle because the huge AC bonus. Mountain Dwarf is good too, because of two +2 ability increases.

In my opinion, I would go with a Variant Human, Elf, or Half-Elf (not pressing it on anyone here)
