Fighter dip start gives CON save and Martial weapon profiency(Dedicated Weapon make longsword as Monk weapon) and Fighting style:Blind fighting for Darkness combo. But extra attack and d6 unarmed strike at level 6.
Monk start gives Extra attack and d6 unarmed at level 5.
Go Shadar-Kai to get proficiency in Long Sword so you do not need to take the DIP int fighter for Prof with Longsword.
If you are using Point Buy It will take you all your MONK ASI to get to DEX/WIS 20/20 to maximize Unarmored Defense, Martial Arts abilities DC saves, TO Hit and damage. will take your level 4, 8, 12, 16 ASIs You may lower the score if you come across and item (weapon/Armor) that can compensate for lower Score and bonus. You will get one more ASI if going to level 20 but with so many Monk features dependent on DEX/WIS it will use alot of ASI for stat increases vs other feats.
Start monk. Build your ki until you feel you have enough for a full adveturing day then go fighter if you still want to. You can get good weapon proficiencies from certain races. Or you could go custom lineage or variant human to start with the resilient feat for constitution proficiency. Or you could take eldritch adept feat for devils sight to see in magical darkness. Lots of options.
Monk is not spell caster so can't get eldritch adept feat, neither "fighting initiate" cause monk doesn't have martial weapon proficiency.
Correct on Eldritch Adept, wrong on Fighting Initiate as short sword is a martial weapon and the requirement is proficiency in a martial weapon. At least until the 2024 PHB comes out if they keep it like the playtest
My mistake on eldritch adept. Thank you for the correction. Shadow monks can cast spells at level 3 so I don't see why you could not take it as a feat at level 4.
Which class should I start with. Fighter or Monk?

What do you want to do with the monk.

And some races have Prof in Martial weapons in any case.

I could see a DM allowing it, but it doesn’t work RAW unfortunately. Just like some DM’s aren’t strict on components or even the BA casting rules.
