so I'm about to play tomb of annihilation with some friends and I want to play a dragonborn monk, I know it's not optimised but our dm likes to do more rp than combat any suggestions story wise or mechanical?
Take the Alternate Racial Trait/Feat for Dragonborn "Dragonhide" (If your DM allows it) From Xanathars Guide. Boosts your AC (your base AC counts as 13 instead of 10) which is something the monk could desperately use as s/he cannot wear armor or shields. Even if it is meant to take the place of your Breath Weapon or other stuff I would seriously recommend it Monks hit die is so poor they could desperately use any additional AC they can get. I'm working on some homebrew Monk traditions and I'm often trying to think of ways to help them boost their AC a bit so they wont be glass cannons
Without giving anything away, Tomb of Annihilation has incentives to progress swiftly (in terms of game days) getting to develop your characters and the world together is always recommended, but in every case you should endeavour to create a character that should be able to survive.
So Dragon born monks and the jungle of Chult? Well green dragons like Jungles if your a native, and if a native of chult your jungle style could borrow from themes along the Capoeria style ( a 'dance' martial art, although that doesn't do it justice) You could play up the culture difference with the rest of the group and the differences between your dismissal of metal armour (haha the jungle heat will boil you in your own sweat!)
Their are also plenty of volcanoes in Chult so red, and gold and brass are all good options for a local Dragonborn.
If you dont have subclass preference, have a think about how you will develop now. This is something I wouldnt want to offer advice on before I knew what you have available as sources and what you prefer to play like! Even two monks of the same subclass could be very different in play style.
I hope that gives you something to build from, enjoy the adventure - it really is rather cool, the hostile environment and the 'alien' flora and fauna are an experience for even veteran players.

I'd look at the different dragon types and pick the one with the highest wisdom for role playing since that's something that your group enjoys doing.
