I am new to DND but am doing my best to understand the rules and also to make sure I am playing correctly. So after looking at dnd beyond it says my longsword has +5 to hit, I am level 5 now and my proficency bonus is +3, do I get +2 more for being proficient in simple weapons? Where is this number coming from ?

+2 should be your Strength modifier.
