If you want to be able to do stuff outside of combat I would suggest Fey Wanderer as the subclass. Doing that allows you to leave Dex at 14 (for Medium armour) while keeping your other stats high. You'll want a maximum Wisdom of course to get the best out of Shillelagh and other spells.
Are you dead set on Cleric? If so, I suggest you go with Yurei's advice and go Nature Cleric. If you just want the whole "nature warrior" vibe then Fey Wanderer paired withe either Druid Circle of the Stars or Circle of Spores have some really useful tricks. Stars isn't as melee focused but is still a valid option. Fey Wanderer 5/Spore Druid 15 is a beast and has great utility. It's also more SAD than if you want to go Cleric with Heavy Armour.

Secondly, spore druid does intrigue me, but the spore damage scaling is unclear if it is class level (like sneak attack) or character level (like cantrips). I have initial thoughts but am curious on others' opinions.

If you're thinking of Halo of Spores that only scales with Druid Levels. The best combat ability of the Spore Druid is the Temporary Hit Points, though. That one is CRAZY. Especially if you go all the way to level 20. :)
Just throwing this out there, the miracle archer build!! Pairs War Cleric2 with Battlemaster Fighter6 the War Cleric gives Divine Favor spell -like Hunters mark but cast on your weapon so You dont waste further bonus actions redirecting it, War Priest gives a few bonus action attacks, and the channel divinity adds +10 to hit. This synergizes with a GWM or sharpshooting Battlemaster who gets precision strike +d8 to hit (that -5 penalty can be superceeded by +d8 or +10 when needed) quick toss allows alot more bonus sharpshooter attacks, Bait&switch boosts AC... Not to mention more feats (xbox xpert, Elf Accuracy), or ASI, extra attacks from fighter. Take fighter first for CON saves & more hp
