Lets say im dual wielding scinitars. Main attack with either, then I use nick and I roll to hit like normal, and thsn for damage I roll like normal, just minus my dex mod?

Correct.
If you chose Two-Weapon Fighting, you would keep the Dexterity modifier on the damage roll.
I also want to mention, long term, you’ll probably end up specializing one way or another at level 4 when you get your first feat.
Which subclass are you looking at? Some of them really eat up your bonus action, to the point that dual wielding isn’t great. Honestly, with all the hunters mark stuff you end up doing, that also uses your bonus action a lot. Dual wielding is kind of the Ranger archetype, but in practice, it often doesn’t work very well.
Ok. So the action economy issue of competing bonus action will mostly be around hunter’s mark vs dual wield. Although there’s also misty step, especially if you make it to level 15.
Just something to consider when it comes to dual wield and ranger.
If you've got a weapon with Nick, then you don't have to worry about the action economy as much, since the extra attack you make as part of the Light property is made as part of your Attack action, so you still have your Bonus Action free to do with as you see fit.
I think anybody on these forums would vote for Archery if you're planning on using your bow for even half the game, as increasing hit chance trumps fixed damage increases one hundred percent of the time.
Sounds like the archer is really the way to go. I’ll note, also, that if/when you take sharpshooter, you’ll be able to fire past and through your allies and if an enemy comes next to you, you’ll still be able to use your bow without penalty.
Also, dropping the bow and drawing two weapons on the same turn isn’t possible (without the dual wielder feat), at least under ‘24 rules. Under ‘14, it’s arguable.
I get the idea of wanting to be able to switch, but the rules structure really works against it. It very much rewards specialization over being a generalist. FWIW I played a 24 drakewarden ranger through level 9. I don’t think I ever touched my short sword.

Hi, looking at running my first Ranger.
I want to be able to be a good switch hitter. Competent melee, and a good archer.
Is it better to go two weapon fighting, or archery for my fighting style?
Archery might be a little better.
Archery makes you more likely to hit, and applies to every ranged weapon attack you make.
Two-Weapon Fighting only applies to one attack per turn (the special extra one you get from using a Light weapon) and only helps if that attack hits.

Ok.
So nick... making sure I get how it works.

Another vote for archery.

Fey wanderer.
And we are point buy, so in going whole hog on dex. Level 4 and 8 are going to be Dex buffs.

Im defenitely planning on only going dual wielding when neccesary.
Also I squeezed out a feat at level 4. Going to take elven accuracy and bump dex to 18
Then at 8 dex bump to 20.
12/16 will be skill master/resilient (wisdom) expertise in something, another skill and cumulative +2 to wis, plus wisdom saving throws.

Ok. ^.^
Party has an odd comp. 2 warlocks (one hexblade), a moon druid tank, and a monk. The warlocks are splitting the difference on Int skills.
