assume we have an enterprising assasin rouge who is rather accopmlished in the arts of death (ie they are 17th level) and they decide to apply a bit of poison to their weapon to make it more effective, ether giant poisonous snake venom, wyvern venom or purple worm poison, any that just deals some extra damage.
assuming that i hit my suprised target in the back, beating them in the initiative roll, that the victim fails the saving throw against death strke, will only the damage of the weapon itself be doubled, or will also the poison applied to the weapon have its damage doubled?
similarly, if my assain has an arrow of slaying that works against the target, will the extra damage dealt by that arrow be multiplied by death strike?
and if death strike indeed makes my poison deadlier, why does it do that from a lore perspective? is the victim's body not expecting to be poisoned, and caugt of guard? do i simply know where to strike to deliver the poison in the best manner possible?

Double the damage of your ATTACK not your weapon. It works just like the critical hit, where you roll all damage twice.
So for your 17th level High Elf Assassin (20 Dex) with Booming Blade cantrip wielding a Short Sword +1 attacking a surprised creature:
((2d6+18d6+8d8)+6)= normal damage *2= Death Strike failed save damage.
Lore perspective; you hit a vulnerable spot, allowing the poison to work faster. Course can make up whatever you want, there is magic so anything CAN be explained away, even if it is explained away poorly.
Partially correct, it doubles all damage of the attack, but poison is a separate attack as it has a save DC. Booming blade would be doubled, as would the fire damage from say a Flame Tongue weapon, but not an applied poison requiring a saving throw. If instead it was a weaping that said "it deals 1d8 poison damage" that would be doubled.
so in summary, if the effect says "..the attack deals an additional (die expression) (damage type)" it will be affected, but if the effects says "...on a hit, the target makes an (abillity score) saving throw, on a failiure it takes (die expression) (damage type)" it will not be affected

Pretty much yes. I cannot think of any exceptions on the top of my head at least. It is based of the rule that saving throw effects don't crit as they don't roll to hit. Poison is the tricky one as it may seem to have an attack roll, but it really doesn't - it just proc's on a hit.
