Different question: If you kill a planar creature, such as a balor, can you grab its soul? As in... did the balor really die when you brought it to zero hit points?
They are “reforged souls,” but they can only die permanently in their home plans, otherwise they get sent back to the plain. Also you’re not stealing their entire soul, just a part of it to create the token. There are spells that can steal an entire soul though. So it’s really up to the dm how much of a stickler they will be. Also careful cuz he goes boom, when he dies, with an average of 37 points of damage, which might not seem like a lot but by the time he’s down, you might not survive his downfall.

This feature of the Phantom Rogue is not "stealing the soul".
"When a life ends in your presence, you’re able to snatch a token from the departing soul, a sliver of its life essence that takes physical form."
"A sliver of its life essence" has no mechanical definition in the game. It is "a trinket". Nothing in the description or flavor text indicates this is a soul, or even a spirit. It is a token. At best, there is a link between the token and the spirit: "you can ask the spirit associated with the trinket one question".
based on the terminology of creature, as raw, you can’t crush a bug and it work. you’d have to kill a creature as defined in the books. you could kill a tiny creature but those are still relative big, since 4 of them can still fit in a 5ft square. frog, seahorse or rat is still your best bet to carry around.
RAW, caterpillars are creatures. There's no rule anywhere saying that the only creatures that exist are the ones with a statblock in a book.
If they are creatures, carrying them will present a whole bunch of problems:
1. RAW two creatures of the same size can not occupy the same space and a tiny creature has a space 2.5 feet wide. So strict RAW you can only carry 1 of them in a bag and 4 on your person because each has its own 2.5 foot square inside your 5 foot square.
2. If it is a creature, that means you are occupying the same space as the caterpillar and RAW if you move through another creature's space that is difficult terrain. So all terrain would be considered difficult and your movement would essentially be cut in half since any time you move, you would be moving in the catapiller's space.
3. Finally if you are killing them, then they are obviously hostile and that imposes disadvantage on all ranged attacks because RAW ranged attacks are at disadvantage if a hostile creature is within 5 feet.
Now you might say it is silly to strictly apply RAW and override common sense and the obvious intent when talking about carrying a bag of caterpillars ...... and you would be right. ;-)
DM should have a CR minimum. Also, these do not work with a caterpillar.
When you choose this archetype at 3rd level, echoes of those who have died cling to you. Hate to be that person to necrobump something from 2023. I'm about to start a Phantom Rogue build. I just had a question on acquiring the soul tokens down the line in battle. It states that you need a free hand to acquire the soul trinket off the creature that dies within 30 feet. If I kill two monsters say with a Heavy Crossbow shot with Sneak Attack damage, and the second creature dies with Wails, do I have to sheathe my heavy crossbow to use a free hand to acquire the soul trinket? As heavy crossbows are a two handed weapon
You don't have to hold a crossbow with two hands at all times. When you load a new quarrel into to, you have to take one hand off the crossbow to grab the quarrel and load it.
You need two hands to fire the crossbow (hold it steady), but before and after firing, you don't need to keep both hands on the weapon.
Following that logic, I would say that you could release your hold on the crossbow with one hand to grab the soul token.
