Hey guys, I've seen a viral image floating around about a Cannibal Warlock where they get power from devouring others. I'm trying to get this created here but I'm not sure if I'm just super green at this or if it's too complicated for me to make here. I'm trying to find out how to let my player select from the powers that they get from the other patrons. Can I get some help in all of this? I'm basically just working from like 3 whole sentences about this concept.
You can look up guides on how to make subclasses and they all begin with the theme. Try to imagine A warlock with the subclass and what makes them so special in comparison to others. Imagine this said character and make abilities based on it. Read up on the other subclasses to see which areas aren't covered and see if you can come up something that could fit your image. After words it'll be a lot of testing until you have your subclass done.
Don't take my words as a proper guide on how to make it so going online and seeing example should help you get what you want.

Yeah, best place to start is always to find a sub-class that works at least a little similarly to what you have in mind so you can copy that and tweak it, rather than trying to reinvent the wheel on everything. For example, The Fiend Patron has the Dark One's Blessing feature to grant temporary HP on a kill, which might be something to consider (if you go for true healing instead, keep in mind that Wizards of the Coast seem to favour abilities only healing if you are below some threshold, usually half).
Also in case it helps with inspiration, I created a Flesh Eater feat a while ago to enable bestial/cannibal play on any character. It's a bit wordier than I might make it now, but if the cannibalism is going to be a core part of your sub-class then it may cover some parts you might want to think about.

Thanks, guys! Sorry for the late reply, work has been very busy. I'm more having trouble now with how to get something going that can allow me to have them choose the pact boons and features that go with those subclasses.i.e. Level 1 starts with stuff pertaining to Celestial then at level 3 changes to Hexblade. They would theoretically keep the spells and boons they permanently got from the old patron and lose access to anything else that was meant to be temporary and change to Hexblade, gaining access to those spells and 1 boon from that being, Does that make sense?
Haravikk was more along the lines of the guidance I needed but I do appreciate the advice, Collin! I've been taking this approach with making my other races and adapting existing ones as well.
