At the end of 1st short rest, converting one of the pact slot into sorcery points. Then take the 2nd short rest to gain back the spell slot. So it is possible using more of those ability.
The risk is that if the 2nd short rest is incomplete, the warlock would end up one less spell slot.

That’s only for multi class, right? This is just a warlock with the meta feat. Two sorcery points. No conversions since that’s for sorcerers. The whole point was basically “what feat do I want? Maybe something that gives me advantage? Hmmmm..if I can get one simple sorcery point...when I get to 17th level. I will have Foresight and advantage on EVERYTHING!!!!”

Then the same would be true of Magic Missile and Scorching Ray, which are specifically listed as "No".
RAW: "...To be eligible, a spell must be incapable of targeting more than one creature at the spell’s current level. For example, magic missile and scorching ray aren’t eligible, but ray of frost and chromatic orb are."
Once you reach level 5, Eldritch Blast IS capable of hitting more than one target, whether or not you do, so it's not eligible for Twinned Spell at that point.

It's not a matter of what you do. It's a matter of what the spell actually can do. So even though you do only target one person. The spell CAN target more than one target.
Which is the same restriction that War Caster's feature that allows you to AoO with spells doesn't allow you to use things like Eldritch blast. Because while you might only target the person running away from you and triggering the spell. The spell is capable of targeting more than that so it's not allowed. Basically the same rules for Twinned Spell Metamagic.
As for the topic at hand. If I was going to pick up metamagic on a warlock. Myself I'd consider empowered spell, Heightened spell, or transmuted spell most likely. all in an effort to make the most of the few spells that I've got either by making them stronger, making them more likely to succeed, or by avoiding resistances if I can.
Edit: forget Heightened spell. i forgot for a moment that it takes 3 sorcery points.
I looked at this again, and I think it can be a useful feat for a Warlock, albeit limited. Subtle spell and Empowered spell are two metamagic options that would work well, as either could be used twice per long rest. Transmuted spell is also a nice option if you really need that fireball to impact a group of monsters resistant\immune to fire.
For a feat, it has narrow uses. But it isn't as bad an option as I originally thought.
Depending on your spell choices these are my favorite: 1. Careful - It costs one point, so is good with limited points 2. Extended - With short rest recharges there are a number of spells that can well out last a short rest. 1 point cost as well. 3. Subtle - Useful for out of combat spell use 4. Transmuted - You have limited spell choices, so this can be more useful

Yeah its only for multi class, though to be fair a warlocks capstone is pretty lame so multi classing post level 17 makes some sense.
