The spell Summon Fey allows you to summon a Fey Spirit. The 'correct' way to implement this in D&D Beyond, to tie into the Maps VTT, would be to add the Fey Spirit as an Extra on your character sheet. That way you can use the "Companions" section of the Token Browser to add that summoned creature when the spell is cast.
One problem, and a pretty significant one if you want the Maps VTT to be robust.
Fey Spirit is not a Monster. [Tooltip Not Found]. Neither is Undead Spirit from Summon Undead. In fact most of the summoned creatures do not exist as Monsters and cannot be added to the VTT. This represents a HUGE hole in the ability to use the VTT for it's full potential. Sure you can say "Just add a Commoner" but that doesn't provide anything like access to a stat block. Additionally, not being able to add the Extra creature means the player has to constantly check back in the spell to see the stats of the creature, and the DM needs to look up the spell to see it as well.
This issue exists for most (if not all) of the summoned creatures whose statblocks are inside a spell, including:
Shadow Spirit
Fey Spirit
Undead Spirit
Abberant Spirit
Construct Spirit
Elemental Spirit
Draconic Spirit
Fiendish Spirit
Homunculus Servant
Eldritch Cannon
Steel Defender
If I own a book that contains a spell that summons a creature, I should have access to that creature in the Maps VTT without having to homebrew up something to cover the D&D Beyond team's shortfalls.
IIRC the sticking point on this is that a lot of these things have variable stats that depend on either the stats of the caster, the spell slot level used in the casting, or both. That's not to say they shouldn't implement this — they absolutely should — but the lack of an existing system to make the variable stats work is probably why they haven't already.

At a minimum they could have done what they did with Expert and Spellcaster - Healer from Dragon of Icespire Peak. There's at least a placeholder creature to use on the Map.
Given that the Extras are tied to a character though (name is displayed in the VTT), it shouldn't be a stretch to tie the stats in.
